One of the things I miss....

I lived in North Carolina from the 6th grade through High School. One of the things I miss during the fall is the Chicken Stew. It's a traditional North Carolina dish. I found this recipe on line and it sounds about right. It's just chicken, milk, butter, flour, salt and pepper. Yummy!!!







SOUTHERN CHICKEN STEW

Ingredients:

1 Whole Chicken (or several boneless, skinless breasts)
1 Can Chicken Broth
Salt and pepper to taste
Milk
Butter
Flour

Preparation:

Parboil chicken in water until tender (usually about 2 hours). If using a whole chicken, break into bite-size pieces and strain all bones, fat, and skin from soup. Reduce heat and make thickening by mixing milk, flour, salt and pepper together until the lumps disappear. Mix thickening with soup and stir well. Add Texas Pete or other hot sauce to taste. Mix in chicken broth and reheat until bubbling

    You can also make it with water. (That's the one I prefer). Box of crackers is the only other thing you need.

  2. And I thought I'd never be hungry again after my lunch ... but I want to go to the kitchen and start my Chicken Stew! Oh, yummmmmm!
